Small Homemade Cherry Strudels

It was the day before my sister’s birthday and she didn’t want a regular cake. What could I  bake for her? While turning the pages of our grandmother’s cookbook I looked out of the window and saw the cherry tree which my grandfather planted when I was born. It was full of fruits… In Istria many people have cherry trees in their garden, red or white but mostly red. It looks nice, the fruits are delicious and the plant is easy to grow.

Seeing the tree took me back some 25 years in this same room… my grandma was there and the smell of a cherry strudel was filling every pore of our house. That’s it, I am making our grandma’s cherry strudel for my sis, I am taking her back to childhood!

These homemade cherry strudels go best with coffee or tea. The cakes are melting in your mouth and in our house are magically gone in a second!

Recipe

Serves: 15 (35 – 40 pieces)

Ingredients

250 g (9 oz) of butter

2 dl (7 oz) of sour cream

400 g (14 oz) of flour

1 baking powder

cherries

sugar

vanilla sugar

powdered sugar

Preparation

  1. Make a dough by mixing flour, baking powder, sour cream and butter. Leave it in fridge for 30 minutes.
  2. Turn on the oven to 180°C (350 F)
  3. Wash the cherries and remove all the pits. Smash a little and place into a large saucepan with sugar on low. Stir until sugar has dissolved and cook rapidly to the jelling point (stirring constantly). If the mixture is to fluid add corn starch.
  4. Roll the dough on the floured surface and cut it in lines.
  5.  Arrange cherry filling down the middle of the pastry lengthwise.20170613_172256(2b)
  1. Take one side of the dough and join with other over the strudel filling. Push it with fingers.
  2. Cut the dough with the filling in small pieces making little strudels and put them on baking sheet. Make sure the jointed side is looking down. Press them a little.
  3. Bake until golden, 20 -25 minutes. Remove from the oven and while hot roll into powdered sugar.

For the filling you can also use any kind of jam, apples, plums or other fruit. The strudels are perfect for hot sunny days ‘cause they can last long, if you manage not to eat them the first day :).
