Don’t you just love bruschette? I adore them ’cause they are easy to make, you can use them as a cool appetizer and even if your fridge is almost empty, you can always find sth to work with. Let yourself be creative and play a little with groceries you have. Today, for family gathering, as an appetizer I served bruschette with mushrooms, prosciutto, Grana Padano cheese and corn salad. Everyone was pleased!
After you clean and peel mushrooms, slice them into small pieces, place them on a baking paper and put in preheated oven on 200 degrees C (392 degrees F) for 15 minutes.
Meanwhile prepare slices of bread and cream them with butter. Cut prosciutto into small pieces and when mushrooms are ready put prosciutto and mushrooms on creamed bread.
Place brushette on baking paper and bake for 10 minutes. Before serving grate Grana Padano cheese on each bruschetta and decorate with corn salad.
