There’s nothing that I love more for breakfast than eggs! I like them scrambled, sunny side up, soft boiled, poached, there are so many ways to prepare them.
Frittata with prosciutto, asparagus, cheese, young onion, pancetta or a combination of those is a typical Istrian breakfast. Here’s a post about that.
Today I prepared a mix of Istrian breakfast and greens (zelje), a vegetable that I did not know before moving to Belgrade (explanation: we don’t have it in Istria hahaha).

6-7 leaves of greens
100 g of pancetta
Chop onion and cook it on olive oil until translucent, in a medium pan. Add chopped greens and let it cook for a few minutes.
Cut pancetta into small cubes and add it to the pan. I don’t like to leave pancetta frying for too long because it gets hard and salty.
Beat the eggs in a bowl and add salt and pepper.
Lower the heat, add the eggs to the pan and cook until done, stirring all the time. Depending on whether you like them soft or harder, adjust the heating and the cooking time.
